Smoked and braised beef short rib cooked with onion, celery, and carrots, sliced and reheated in jus. Served on a hoagie roll with arugula pesto and melted Gruyère cheese. Topped with a salad of arugula, red onion, serrano escabeche, and lemon honey vinaigrette. Served with fries.
